
Pistachio Cookies Recipe | Nutty and Delicious
Ingredients:
1 cup (225g) unsalted butter, softened
3/4 cup (150g) granulated sugar
1/2 cup (100g) brown sugar, packed
1 large egg
1 tsp vanilla extract
2 cups (250g) all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup (125g) shelled pistachios, roughly chopped
1/2 cup (90g) white chocolate chips (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream the Butter and Sugars:
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add Egg and Vanilla:
Beat in the egg and vanilla extract until well combined.
Mix the Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in Pistachios and Chocolate Chips:
Gently fold in the chopped pistachios and white chocolate chips (if using) until evenly distributed throughout the dough.
Shape the Cookies:
Scoop out rounded tablespoons of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
Bake the Cookies:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should still be slightly soft.
Cool and Serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
